野菜とそうめんのゆず胡椒ぽん酢炒め

つゆで食べる事の多いそうめんを、ゆず胡椒ぽん酢を使ってチャンプル風にしました。ゆず風味でさっぱりと頂けます。

材料

  • なす2個(140g)
  • しめじ1袋(100g)
  • 玉ねぎ1個(200g)
  • パプリカ1個(120g)
  • にんにく1片(10g)
  • 島原産手延素麺3束(150g)
  • ゆず胡椒ぽん酢醤油味大さじ3
  • オリーブ油大さじ1
  • 塩・コショウ少々
  • 揚げ油適量

作り方

なすは厚さ5mm位の半月切りにし水にさらし水気を十分にとる。玉ねぎは厚さ5mm位のいちょう切り。パプリカは幅5mmの千切りにし長さ半分に切る。しめじは石づきを取り小房に分ける。にんにくはみじん切り。
フライパンに揚げ油を熱し、なすを素揚げし、油をよく切る。耐熱皿にパプリカ、玉ねぎ、しめじを入れラップをかけて電子レンジに500Wで5分位かけ、出た水分を切る。
そうめんは半分に折り、表示時間より少し短めに茹で、冷水でもみ洗いして水気を切る。
フライパンにオリーブ油、にんにくを入れ火にかけ香り立ったら野菜とそうめんをさっと炒め、ゆず胡椒ぽん酢醤油をかけて混ぜ合わせ、塩・コショウで味を調える。
