白みそ仕立てのサラダ素麺

素麺に、抗疲労効果のあるアボカド、ジャガイモ、鶏胸肉をのせたお素麺です.
山椒を効かせた白みそのタレが食欲をそそります!

材料

  • アボカド（少し青いもの）１個
  • ジャガイモ中２個
  • トマト１個
  • 鶏胸肉１枚
  • 長ネギ１０ｃｍ分
  • 白みそ大さじ２
  • 山椒小さじ1/2
  • 酒１カップ
  • 塩小さじ1/2
  • 素麺３００ｇ

ごま油少量

作り方

鶏胸肉は、塩小さじ1/2をまぶして１０分置く（できれば２日ほど冷蔵庫で塩漬けにする）.
耐熱皿に入れて酒１カップを加えてラップをかけ、４分前後加熱する.
そのまま数分蒸らす.
粗熱が取れたら１ｃｍ角に切る.
スープは白みそのタレに使うので、冷ましておく.
アボカドは皮をむき、種を除いて１㎝角に切る.
薄くごま油をひいたフライパンで１分ほど炒める.

長ネギは千切りに、トマトは１ｃｍ角に切る.
ジャガイモは皮をむいて１ｃｍ角に切り、６００ｃｃのお湯で２分ほどゆでる.

煮汁はとっておき、ジャガイモをお皿に入れて冷ます.
１の鶏を蒸した後のスープに、白みそとジャガイモの煮汁を５００ｃｃ加え、良く混ぜる.
さらに、山椒と氷のキューブを５個くらい（１００cc分くらい）入れて混ぜる.
素麺をゆでてざるにあけ、氷水でしめる.
器にそうめんを入れ、白みそのタレをかけ、上に野菜と鶏肉、長ネギを盛り付ける.
鶏胸肉は塩漬けにすると弾力が出て美味しくなります！
アボカドは少し青いものを選び、加熱することで生とは違う味わいになります.
ジャガイモは加熱しすぎず、食感を楽しみます.
